Abstract

Ushbu maqolada dukkakli donli ekinlar (masalan, no‘xat, loviya, soya) tarkibidagi lipid moddalarning turlari, miqdori va ularning biologik ahamiyati o‘rganilgan. Maqolada ushbu lipidlarning turlari (triglitseridlar, fosfolipidlar, sterollar), ularning metabolik jarayonlardagi ishtiroki hamda oziq-ovqat sanoatidagi qo‘llanilishi yoritilgan. Shuningdek, lipid tarkibi dukkakli donlarning naviga, 
yetishtirish sharoitlariga va saqlash texnologiyasiga bog‘liq ekanligi ko‘rsatib o‘tilgan. Maqolada, oziq-ovqat sanoati, parhez dietasi va o‘simlik yog‘i ishlab chiqarishda dukkakli donlarning roli haqida ham tavsiyalar beradi.
