Ushbu maqolada oziq-ovqat mahsulotlari tarkibida uchraydigan asosiy organik kislotalar, ularning biologik va texnologik funksiyalari tahlil qilinadi. Ayniqsa, ularning ta'm, saqlanish muddati, mikrobiologik barqarorlik va ishlov berish jarayonlaridagi roli yoritiladi. Turli mahsulotlarda uchraydigan limon, sirka, olma sut, askorbin kabi kislotalarning o‘ziga xos xususiyatlari ko‘rib chiqiladi.
