Mazkur maqolada O‘zbekiston xalqining an’anaviy oziq-ovqat madaniyatida alohida o‘rin egallagan milliy non mahsulotlari hamda ularning texnologik jarayonlari yoritilgan. Unda turli hududlarga xos non turlari — patir, obinon, tandir non, qatlama va boshqa mahsulotlarning xususiyatlari, xomashyo tarkibi, tayyorlanish texnologiyasi hamda ularni saqlash usullari haqida ma’lumot beriladi. 
Shuningdek, non mahsulotlarining oziqlanishdagi o‘rni, ularning biologik va energetik qiymati hamda zamonaviy texnologiyalar asosida ishlab chiqarishni takomillashtirish yo‘nalishlari tahlil qilingan. Maqola milliy an’analarni asrash, non mahsulotlari sifatini 
oshirish va sanoatlashtirish imkoniyatlarini o‘rganishga qaratilgan.
